GARLIC PRAWN PASTA SERVES 4 PREP 5 MINS COOK 20 MINS • 500g penne • 1 red capsicum, seeded, sliced • 500g frozen garlic prawns, thawed • 400g can cherry tomatoes • 160g bag baby spinach leaves • grated parmesan, black pepper, to serve 1 In a large saucepan of boiling salted water, cook pasta following packet directions until almost al dente.
