Quick chilli con carne Feed the family with Sally Obermeder’s weeknight wonder SERVES 4 Heat 2 tbsp olive oil in a large non-stick frying pan over medium-high heat. Add 2 finely chopped medium brown onions, 3 crushed garlic cloves, 1 finely chopped medium red capsicum and 2 finely chopped medium carrots. Cook for 8 mins or until softened. Add 2 tbsp olive oil and 500g beef mince to the pan. Cook for 3 mins. Season with salt and pepper.
