LINGUINE WITH ROCKET PESTO & ANCHOVY
SERVES 4 PREP 10 MINS COOK 15 MINS
• 500g linguine • 100g rocket, plus extra to serve •1/3 cup olive oil, plus 2 tbsp extra • 1 lemon, juice • 2 garlic cloves, chopped finely • 1 tomato, diced finely • 10 whole anchovy fillets, chopped finely • 3 long red chillies, seeded, chopped finely • ½ cup grated parmesan • slivered almonds, chilli flakes, to serve 1 Cook linguine following packet instructions. Drain, reserving ¼ cup cooking water. Set aside.
2 Meanwhile, in a food processor, pulse rocket, olive oil, juice and half the garlic until combined. Set aside.
3 In a large saucepan, heat extra olive oil on medium. Cook tomato, anchovies, chillies and remaining garlic 3-4 mins until softened.
