SPICED CAULIFLOWER SALAD
SERVES 4 PREP + COOK 50 MINS
• 1 head cauliflower, trimmed, cut into florets • ¼ cup olive oil • 1 tbsp harissa paste •1/3 cup tahini • ¼ cup water • juice 1 lemon • 2 garlic cloves, crushed • ¼ tsp cumin • 400g can chickpeas, rinsed, drained • 150g bag baby spinach • 250g punnet cherry tomatoes, halved • ½ bunch mint, leaves picked • 1 small red onion, sliced thinly •1/3 cup dried cranberries • 2 tbsp pistachios, toasted, chopped finely 1 Preheat oven to 200°C.
2 Toss cauliflower, 2 tbsp of the oil and harissa paste on lined oven tray. Season. Roast 25-30 mins.
3 In a bowl, combine tahini, water, lemon juice, garlic and cumin. Season. Set aside.
