BAKED TOMATO & CHEESE RISSOLES
SERVES 4 PREP + COOK 1 HOUR + CHILLING
• 500g beef mince • 4 rindless bacon rashers, chopped finely • 1 zucchini, grated, excess moisture squeezed out • 1 small onion, grated • 1 egg, whisked • 1 tbsp Worcestershire sauce • 1 tbsp chopped parsley leaves • 2 tbsp olive oil • 4 medium potatoes, cut into small chunks, par-boiled • 400g butternut pumpkin, peeled, cut into large chunks • 1 tomato, sliced • ½ cup grated mozzarella • basil leaves, to serve 1 Preheat oven to 200°C.
