SLOW-COOKED ALE MEATBALLS

• 500g pork and veal mince• 1 cup fresh breadcrumbs• cup finely chopped parsley, plus extra, to serve• cup grated parmesan• 1 egg, whisked• ¼ cup olive oil• 1 large onion, finely chopped• 1 large carrot, finely chopped• 2 stalks celery, finely chopped• 4 garlic cloves, crushed• ¼ cup tomato paste• 2 cups beef stock• 300ml pale ale• couscous, to serve (see tip) 1 In a large bowl, combine mince, breadcrumbs, parsley, parmesan and egg. Season and mix well. Roll 2 tbsp mixture at a time into balls. Arrange on a tray.
