Crazy for coconut Whip up this tasty coconut cake and indulge guilt-free (well, almost) Preheat oven to 160°C. Grease or line a 20cm cake pan. Soak 1 cup desiccated or shredded coconut in ½ cup milk 1 hour. Using an electric mixer, beat 250g butter with 1 cup dextrose until pale and fluffy. Add 2 eggs, one at a time, beating well after each. Beat in 1 tsp vanilla essence. Gradually beat in coconut and milk mixture. Sift 1¾ cups plain flour with 2 tsp baking powder. Fold in half the sifted flour, mixing until just combined. Fold in ¼ cup milk. Fold in remaining flour.
