TANDOORI CHICKEN NAAN
SERVES 4 PREP 10 MINS COOK 10 MINS
• 12 cherry tomatoes, halved • 1 Lebanese cucumber, diced • 1 small red onion, thinly sliced • 2 tsp lemon juice, plus 2 tbsp extra • ½ cup Greek yoghurt •1/3 cup shredded mint • 2 tsp cumin seeds, toasted • ¼ cup tandoori paste • 1 tbsp water • 500g chicken thigh fillets, halved • 1 tbsp vegetable oil • 4 naan bread • coriander, mint leaves, to serve 1 In a bowl, combine tomatoes, cucumber, onion and lemon juice. 2 In another bowl, combine yoghurt, mint and cumin seeds. Season.
3 In a large bowl, combine tandoori paste, extra lemon juice and water. Add chicken pieces, tossing to coat.
