BEEF, MUSHROOM & SNOW PEA STIR-FRY

• 2 tbsp vegetable oil• 500g beef fillet, thinly sliced• 400g mixed mushrooms (see tip)• 4 green onions, white part 4cm lengths, green tips sliced• 3cm fresh ginger, peeled, finely grated• 2 garlic cloves, crushed• 1 tsp sesame oil• 1/2 cup beef stock• 200g snow peas, trimmed• 2 tbsp oyster sauce• 1 tbsp soy sauce• steamed rice, 1 long red chilli, thinly sliced, to serve 1 In a wok or large frying pan, heat half oil on high. Stir-fry beef in two batches, 1-2 minutes each, until well browned. Remove.
2 In same wok, heat remaining oil on high. Add firm mushrooms (shiitake), onions, ginger, garlic and sesame oil. Stir-fry 2-3 minutes, until just tender.
