CHINESE CHOW MEIN

2 tbsp peanut oil250g pork mince4 green onions, white part chopped,tips shredded2 garlic cloves, chopped2cm ginger, finely chopped2 tsp caster sugar1 red capsicum, finely sliced1 bunch buk choy, leaves and stemsseparated, thinly sliced2 tbsp oyster sauce1 tbsp light soy sauce1 tbsp Chinese cooking wine2 tsp sesame oil450g packet fresh thin hokkien noodlesbean sprouts, crushed roasted peanuts(see tip), to serve
1 In a wok or large frying pan, heat oil on high. Stir-fry pork mince, 3-4 minutes, breaking up lumps, until well browned.
2 Add white part of onion, garlic and ginger, stir-fry 1 minute. Mix in sugar, stir-fry 1 minute. Add capsicum and buk choy stems and stir-fry 1-2 minutes, until tender crisp.
