PORK MINCE PAD THAI

250g pad thai rice noodles1 cup coriander leaves1 cup bean sprouts, trimmed2 green onions, thinly sliced1 large red chilli, thinly sliced100g palm sugar, chopped½ cup fish saucecup water2 tbsp tamarind pastepinch chilli powder1 tbsp vegetable oil500g pork mince100g sugar snap peas, trimmed, halved1 red capsicum, seeded, slicedcup roasted peanuts, choppedlime cheeks, to serve
1 Place rice noodles in a bowl and cover with just-boiled water. Soak them for 5 minutes until tender. Drain.
2 Place coriander, bean sprouts, onion and chilli in a bowl. Set aside.
