PORK KATSU CURRY

• ¼ cup olive oil• 1kg pork leg, cubed• 2 large onions, sliced• 2 tbsp curry powder• 1 tbsp plain flour• 5cm fresh ginger, peeled, finely grated• 5 cups chicken stock• 4 large carrots• 500g potatoes, peeled, diced• 2 green apples, peeled, cored, grated• steamed white rice, to serve• 1 tbsp sesame seeds, toasted• 1 green onion, thinly sliced 1 In a large saucepan, heat half oil on medium. Brown pork in batches 3-4 minutes each. Remove from pan and set aside.
2 In same pan, heat remaining oil on high. Saute onion 3-4 minutes until tender. Stir in curry powder, flour and ginger, and cook 1 minute.
