THE SUPER BEEF BURGER
SERVES 4 PREP + COOK 35 MINS
• ¼ cup olive oil • 2 onions, sliced • 4 cloves garlic, crushed • 600g minced beef • 1 onion, extra, chopped finely • 1 tbsp Dijon mustard • 1 cup fresh flat-leaf parsley leaves, chopped • ²/3 cup kefir yoghurt or Greek-style yoghurt • 4 dark rye burger buns, toasted • 1 large avocado, sliced • ¹/3 cup fermented beetroot ketchup (optional) • ¹/3 cup carrot kraut (optional) • 1 cup mixed salad leaves 1 Heat 2 tbsp of the oil in a heavy-based frying pan over medium heat. Add sliced onion and half the garlic, and cook, stirring occasionally, 20 mins, or until caramelised. Stand, covered, until required.
