CAULIFLOWER FRIED ‘RICE’
SERVES 6 PREP + COOK 15 MINS
• 600g cauliflower, broken into florets• 2 eggs• 1 tbsp water• 2 tbsp vegetable oil• 150g button mushrooms, sliced• 3 cloves garlic, crushed• 3 green onions, sliced thinly, plus extra to serve• 75g ham, sliced thinly• ½ cup frozen peas, thawed• 1 tbsp soy sauce• 1 long red chilli, finely chopped, plus extra to serve 1 Pulse cauliflower in a food processor until it resembles fine crumbs.
