BARBECUED PRAWNS WITH WITLOF
SERVES 4-6 PREP 45 MINS+ MARINATING COOK 10 MINS
• ¾ cup olive oil• 2 tbsp finely grated lemon zest• 2 garlic cloves, crushed• 2 tsp dried chilli flakes• 24 large green king prawns, halved lengthwise• 1 medium beetroot, scrubbed• 4 witlof, leaves separated• 1 ruby grapefruit, segmented• 1½ tbsp red-wine vinegar• micro-parsley leaves, to serve 1 In a medium bowl, combine ½ cup oil, zest, garlic and chilli. Add prawns, season and toss well to coat. Chill, covered, hour.
2 Using a mandoline, cut beetroot into thin slices. Place beetroot in a medium bowl with witlof, grapefruit and combined vinegar and remaining oil. Toss gently to combine. Season.
