SUMAC EGGPLANT SKEWERS & CHILLI TOMATO SALAD SERVES 4 PREP + COOK 30 MINS • 2 large eggplants, coarsely chopped• 2 medium lemons, thickly sliced• 2 tbsp garlic oil• 1 tsp ground sumac• 2 tbsp roasted flaked almonds• 280g labne CHILLI TOMATO SALAD • 400g mixed baby heirloom tomatoes, halved• 1 tbsp thinly sliced preserved lemon zest (see tip)• 1 long red chilli, seeded, thinly sliced• 1 cup parsley leaves• ½ cup mint leaves• 2 tbsp red-wine vinegar• 1 tbsp garlic oil 1 Place eggplant, lemon and oil in a medium bowl and toss to coat. UNICORN POPCORN MAKES 8 CUPS Line 4 oven trays with baking paper. In a medium saucepan, combine ½ cup caster sugar and 2 tbsp water on low, stirring until sugar has dissolved. Increase heat to medium, simmer without stirring 5 mins until mixture is reduced and syrupy. Add a few drops blue food colouring and swirl to combine.
