TERIYAKI TURKEY STIR-FRY
SERVES 4 PREP 10 MINS + MARINATING COOK 10 MINS PER SERVE 865kJ
• 500g turkey breasts, sliced• ¼ cup soy sauce• ¼ cup sherry• 2 tsp grated ginger• 2 garlic cloves, crushed• 1 onion, sliced• 4 green onions, sliced diagonally• 1 bunch choy sum, trimmed, sliced• steamed rice, sliced red chilli, to serve 1 In a large bowl, combine turkey with soy, sherry, ginger and garlic, tossing well. Marinate for at least 20 mins (place in the fridge if you’re marinating longer).
2 In a wok or large frying pan, heat oil on high. Drain turkey, reserving marinade. Stir-fry in two batches 2-3 mins each until browned. Set aside.
3 In same wok, stir-fry onion and green onion 1-2 mins. Return turkey to wok with choy sum and reserved marinade.
