BAKED GREEK MEATBALLS
SERVES 4 PREP 10 MINS COOK 30 MINS PER SERVE 2310kJ COST
• 500g lamb mince• 1 small red onion, finely chopped• 1 cup fresh breadcrumbs• ¼ cup finely chopped parsley• 2 tbsp chopped oregano leaves• 1 tbsp finely chopped mint leaves• 1 egg• 4 garlic cloves, crushed• 2 tbsp olive oil• 2 x 400g cans diced tomatoes• 200g feta, crumbled• grilled flatbread, lemon wedges, to serve 1 Preheat oven to moderate, 180°C.
2 In a bowl, combine mince, onion, breadcrumbs, herbs, egg and garlic. Season and mix well. Shape 2 tbsp mixture into balls.
3 In a large ovenproof frying pan, heat oil on medium. Cook meatballs in two batches, 3-4 minutes each, until browned. Return all meatballs to pan with tomatoes and bring to the boil.
4 Sprinkle with feta. Bake 20-25 minutes until sauce thickens…
