RICOTTA & SALAMI LASAGNE
SERVES 4-6 PREP 20 MINS COOK 1 HOUR PER SERVE 3560kJ
• 1 onion, finely chopped• 1 tbsp olive oil• 80g sliced salami, chopped• 1 carrot, diced• 1 celery stalk, chopped• 575g jar red wine bolognese pasta sauce• 2 tbsp chopped basil, plus leaves, to serve• 2 tbsp chopped parsley• 375g lasagne sheets• 400g soft ricotta• 1½ cups grated mozzarella WHITE SAUCE • 60g butter, chopped• ¼ cup plain flour• 2 cups milk• cup grated Parmesan 1 Preheat oven to moderate, 180°C. Lightly grease a 8-cup ovenproof dish.
2 Saute onion in oil 2-3 minutes, until tender. Add salami, carrot and celery. Cook 4-5 minutes.
3 Stir in sauce and herbs. Simmer 10 minutes.
