CHICKEN, ZUCCHINI & BRIE RISOTTO

• 1 red onion, finely chopped• 1 tbsp olive oil• 1½ cups Arborio rice• 6 cups chicken stock, heated• 1 small barbecued chicken, skin removed, flesh shredded• 1 medium zucchini, batons• 125g brie, chopped• ½ cup grated parmesan• 2 tbsp thyme• crispy prosciutto, to serve 1 Saute onion 1-2 minutes in oil. Stir rice through and cook for 1-2 minutes, stirring to coat with oil.
