CHICKEN KORMA PITA BREADS

• 2 tbsp ghee or vegetable oil• 1 red onion, finely diced• 4 cloves garlic, crushed• 4cm piece ginger, peeled, grated• 500g chicken thigh fillets, 2cm pieces• ½ cup korma paste• 2 tomatoes, roughly chopped• 165ml jar coconut milk• cup sultanas• ¼ cup flaked almonds• 1 cup basmati rice• 1 pinch saffron• 2 cups water• 4 pita pockets• thinly sliced mini cucumbers, coriander and plain yoghurt, to serve 1 In a large saucepan, heat ghee or vegetable oil on medium.
