TURKEY WITH SUN-DRIED TOMATO STUFFING
SERVES 12 PREP 20 MINS COOK 2½ HOURS
• ¼ cup olive oil• 2 onions, thinly sliced• 5 garlic cloves, crushed• 2 zucchini, grated• 180g tub semi-dried tomatoes, drained• 1 long red chilli, seeded, chopped• 2 cups fresh breadcrumbs• 90g packet croutons• ½ cup pistachios• cup coarsely chopped parsley leaves• 2 tbsp fresh lemon juice• 2 tsp finely grated lemon zest• 3kg turkey buffe, boned (see tip)• salad of rocket and chargrilled peach wedges, to serve 1 Preheat a hooded barbecue to moderate, 180°C. Line a roasting dish with baking paper.
2 In a frying pan, heat half oil on medium. Saute onion and garlic 4-5 minutes. Add zucchini, tomatoes and chilli. Cook, stirring, 4-5 minutes.
3 Transfer mixture to a bowl. Add breadcrumbs, croutons, pistachios, parsley, juice and zest. Season.
