INDIAN BEEF CURRY CUPS
SERVES 4 PREP 15 MINS COOK 20 MINS PER SERVE 1862kJ COST
• 1 tbsp vegetable oil• 1 onion, thinly sliced• 2 garlic cloves, crushed• 3cm piece ginger, peeled, grated• 500g lean beef mince• 1/3 cup korma curry paste• 1 carrot, grated• 1 zucchini, grated• ½ cup chicken stock• baby cos, steamed basmati rice, coriander sprigs, yoghurt, pappadums, mango chutney, to serve 1 In a large deep frying pan, heat oil on medium. Saute onion, garlic and ginger 3-4 minutes until onion is tender.
2 Add mince and brown 4-5 minutes, breaking up lumps.
3 Stir in curry paste, carrot, zucchini and then stock. Cook 10 minutes, stirring.
4 Break baby cos into leaves. Divide mince mixture between lettuce cups and serve with rice, coriander, yoghurt, pappadums and mango chutney.
