SALMON PATTIES WITH CHARGRILLED BROCCOLINI
SERVES 8 PREP 20 MINS COOK 15 MINS PER SERVE 1858kJ COST
• 415g can red salmon, drained, flaked• 3 cups cold mashed potato• 6 green onions, finely sliced• 4cm piece fresh ginger, peeled, grated• 2 tbsp finely chopped coriander• 2 long red chillies, seeded, finely chopped• ½ cup plain flour• 2 eggs, lightly beaten• 1½ cups panko breadcrumbs• ¼ cup black sesame seeds• cup sesame seeds• ¼ cup sunflower oil• 1 bunch broccolini, trimmed, blanched• 200g green beans, trimmed, blanched• chilli mayo (see tip), lime wedges, to serve 1 In a large bowl, combine salmon, potato, onion, ginger, coriander and chilli. Season. Shape into 16 even-sized, flattened patties. Arrange on a lined oven tray.
