POTATO, SPINACH & TUNA BAKE
SERVES 4-6 PREP 25 MINS COOK 1 HOUR COST
40g butter2 tbsp plain flour2½ cups milk425g can tuna, drained,flaked¾ cup finely gratedparmesan, plus ¼ cupextrafinely grated zest 1 lemon500g peeled, sliced potato100g baby spinach½ onion, finely choppedmixed salad leaves,to serve
1 Preheat oven to moderate, 180°C.
2 In a saucepan, melt butter. Add flour, stirring 1 minute. Add milk and cook, stirring, until sauce boils. Simmer 3 minutes.
3 Fold tuna, parmesan and zest through sauce. Season to taste.
4 In a 6-cup casserole dish, arrange half potato, spinach, onion and tuna mixture, then repeat layers. Bake, covered, 30 minutes. Uncover, sprinkle with extra parmesan, bake 40-45 minutes until tender. Serve with salad.
