1 large onion, finely chopped
2 garlic cloves, crushed
150g green beans, cut into 2cm pieces
2 celery stalks, finely chopped
1 large carrot, finely chopped
4 cups beef stock
2 cups water
400g can diced tomatoes
2 cups cabbage, shredded
1 zucchini, thinly sliced
250g packet microwave long-grain rice
2 tbsp chopped parsley, plus extra leaves, to serve
