MON EASY CHICKEN CAESAR SERVES 4 PREP 10 MINS COOK 5 MINS PER SERVE 1564kJ 4 eggs 2 rashers rindless bacon, sliced 2 baby cos, leaves separated 1 cup shredded barbecue chicken ½ avocado, peeled, sliced ½ cup prepared croutons DRESSING ¼ cup extra virgin olive oil 1 tbsp red wine vinegar 2 tsp Dijon mustard 2 anchovy fillets, finely chopped 1 tsp Worcestershire sauce 1 clove garlic, crushed few drops Tabasco 1 Place eggs in a small saucepan. Cover with water and bring to the boil on high. Cook 3-4 minutes. Rinse under cold running water. Peel and quarter, then set aside. 2 Meanwhile, heat a frying pan on high. Roast pumpkin & garlic dip SERVES 4 Preheat oven to 200°C. Arrange 500g peeled, chopped pumpkin and 4 cloves unpeeled garlic on an oven tray. Drizzle with 2 tbsp olive oil, season. Bake 20-30 minutes until tender. Cool 5 minutes. Peel garlic and mash with pumpkin and 400g can drained white beans. Stir in 2 tbsp olive oil and season. Top with shredded basil leaves.
