HONEY CUMIN LAMB WITH DATE & CRANBERRY STUFFING

• 1.5kg butterflied leg of lamb
• 1 tbsp olive oil
• 1 tbsp honey
• roast potatoes, baby carrots, steamed beans, ready-made gravy, to serve
STUFFING
• 2 cups stale sourdough breadcrumbs (160g)
• ¼ cup pitted dates, chopped
• ¼ cup dried cranberries, chopped
• 1 small onion, grated
• 2 cloves garlic, crushed
• ⅓ cup shredded fresh parsley
• ⅓ cup pine nuts, toasted
• 30g butter, softened
• 3 tsp ground cumin
1 STUFFING Combine breadcrumbs, dates, cranberries, onion, garlic, parsley, pine nuts, butter and 1 tsp cumin in a large bowl. Season with salt and pepper.
