HARISSA LAMB SLOPPY JOES
SERVES 4 PREP & COOK 20 MINS
• 500g lamb mince (see tip)
• 1 onion, finely chopped
• 2 tbsp harissa spice blend
• ¹/³ cup tomato paste
• 400g can chickpeas, drained, rinsed
• 200g tub hummus
• 4 Turkish rolls, split, toasted
• 100g Greek-style feta, crumbled
• 250g (small tub) tabouleh (see tip)
• hot chilli sauce, lemon wedges, to serve
1 Heat a large, nonstick frying pan over medium-high heat. Add lamb and onion. Cook, stirring to break up mince, for 8-10 mins or until evenly browned.
2 Add spice blend, tomato paste and chickpeas. Cook, stirring, for 2 mins. Stir in 1½ cups water and bring to the boil. Gently boil for 5-10 mins or until thickened.
