SMOKY CHIPOTLE CHICKEN NACHOS

• 1 brown onion, finely chopped
• 2 garlic cloves, crushed
• ¼ cup fresh coriander roots and stems, finely chopped
• 1 tbsp smoky chipotle seasoning
• 500g chicken mince
• 435g can refried beans
• 350g packet tortilla chips
• 2 cups grated Mexican cheese blend
• guacamole, sour cream, fresh coriander leaves, sliced red chilli, to serve
1 Line a large, deep, oven-proof tray with baking paper.
2 Heat an oiled, large nonstick frying pan over medium heat. Add onion. Cook, stirring occasionally, until soft. Add garlic, coriander and chipotle seasoning. Cook, stirring, for 1 min. Add chicken and cook, stirring to break up mince, for 5-6 mins or until changed in colour.
