CREAMY BROCCOLI, SPINACH & POTATO SOUP

• 2 rashers bacon, rind removed, chopped
• 1 onion, chopped
• 1 garlic clove, crushed
• 3 potatoes, peeled, chopped
• 1.5 litres (6 cups) chicken stock
• ¼ tsp ground nutmeg, plus extra to sprinkle
• 1 bunch spinach, trimmed, chopped
• 500g broccoli, cut into florets
• ¼ cup cream
1 Heat a large, oiled saucepan over high heat. Add bacon and cook, stirring, for 2 mins or until crisp. Remove from pan.
