The Woman’s Day team is counting down the sleeps until we can flop on the beach and/or head to our hometowns for big family reunions. CHRISTMAS-SPICED PORK BELLY AIR FRYER BITES SERVES 6 (AS A STARTER) PREP 15 MINS COOK 25 MINS • 1.25kg pork belly • 2 tsp mixed spice • 2 tsp garlic salt • ½ cup cranberry jelly • 1 tbsp red-wine vinegar • chopped parsley, to serve TIP Depending on the size of your air fryer, you may have to cook the pork in 2 batches. 1 Cut pork belly into 2.5cm pieces and place in a large bowl. PRAWN & LIME LETTUCE CUPS SERVES 4-6 PREP 25 MINS • 500g cooked prawns, peeled and deveined • 320g mixed mini tomatoes • 2 limes, finely grated zest and juice • 2 tbsp extra-virgin olive oil • 1 jalapeño, deseeded and diced • 1 small red onion, diced • 2 baby gem lettuce • fresh coriander leaves, to serve 1 Cut prawns into 2cm pieces and place in a medium bowl.
