Balsamic & rosemary shoulder of lamb A wholesome dish full of flavour SERVES 4 Place 1 tbsp olive oil, 2 tbsp chopped rosemary and 1½ tbsp balsamic vinegar into a large bowl, then whisk together. Add 600g lamb shoulder (bone in), skin-side down to marinate for at least 1 hour. Preheat oven to 160°C. Add 2 cloves minced garlic and ½ tbsp salt to marinade, basting both sides of lamb. Sit lamb in a roasting pan, skin-side up. Add chicken stock or water to the base of the pan. Loosely cover with baking paper and foil. Roast in oven for 2 hours, then check for doneness.
