SPICY KOREAN MEATBALLS SERVES 4 PREP 10 MINS COOK 20 MINS • 3 Japanese eggplants • 3 medium carrots • 2 green onions • 500g pork meatballs • ¼ cup gochujang paste (Korean red chilli paste) (see Tip) • ¹/³ cup honey • 2 tbsp rice-wine vinegar • 1½ tbsp soy sauce • 3 tsp sesame oil • 3 x 200g pkts pre-cooked udon noodles 1 Preheat oven to 220°C. 2 Slice eggplants and carrots into rounds. Thinly slice green onions on an angle. 3 Place meatballs, eggplant and carrot in a 30cm round baking dish. Combine gochujang paste, honey, rice-wine vinegar, soy sauce and sesame oil in a small bowl. Pour the sauce over the meatballs and vegetables, stirring to coat. Roast 20 mins or until golden and cooked…

Preheat oven to 190°C. Dump the crumbs onto a rimmed baking sheet. Drizzle on 2 tbsp olive oil, sprinkle with 1 tsp dried Italian herbs, 1 tsp garlic powder, ½ tsp sea salt and ½ tsp pepper, tossing to coat.
