APPLE BLONDIES WITH LEMON GLAZE
MAKES 16 PREP 15 MINS COOK 25 MINS + COOLING
• 1½ cups self-raising flour, sifted
• 1 cup caster sugar
• ½ cup almond meal
• 1 tsp ground cardamom
• 1 large Pink Lady apple, cored, chopped, plus 1 extra, thinly sliced
• 90g butter, melted, cooled
• 2 eggs, lightly whisked
LEMON GLAZE
• ¼ cup icing sugar, sifted
• 1 lemon, finely grated zest, 2 tsp juice
• 2 tsp boiling water
1 Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.
