PARSNIP, PUMPKIN & BEAN GRATIN
SERVES 4 PREP 20 MINS COOK 50 MINS
• 6 small parsnips, peeled, chopped
• 350g pumpkin, peeled, chopped
• 2 tbsp olive oil
• 3 rashers rindless bacon, chopped
• 1 bunch spinach, trimmed, chopped
• 250g fresh ricotta
• ¾ cup thickened cream
• ¼ cup parmesan, grated
• 400g can butter beans, rinsed, drained
• 2 cups fresh breadcrumbs (see Tip)
• ½ cup macadamia nuts, roughly chopped
• ½ cup tasty cheese, grated
• 30g butter, melted
1 Preheat oven to 180°C. In a 12-cup baking dish, combine parsnip and pumpkin. Drizzle with oil and season. Bake for 15 mins.
