SLOW-COOKED PORK & LENTIL RAGOUT
SERVES 4-6 PREP 20 MINS COOK 1 HOUR 20 MINS
• 1.5kg pork neck, trimmed, cubed
• ½ cup seasoned flour
• ¼ cup olive oil
• 1 onion, chopped
• 1 carrot, chopped
• 1 stalk celery, trimmed, chopped
• 1 long red chilli, finely chopped
• 400g can brown lentils, drained, rinsed
• 400g can crushed tomatoes
• 1 cup water
• ½ cup red wine
• ¼ cup balsamic vinegar
• chopped parsley, mashed potato, steamed broccolini, to serve
1 Preheat oven to 160°C.
2 Toss pork in flour, shaking off excess. In a large, flame-proof casserole dish, heat oil on high. Brown pork, in 3 batches, for 4-5 mins each. Set aside.
