Sweet & sour tofu Delight your taste buds with this vegan dish SERVES 2 Coat 500g tender or fi rm tofu (cut into 2cm dice) in 80g cornfl our. In a bowl, mix together 1 tbsp sugar, ¼ tsp salt, 2 tbsp soy sauce, 3 tbsp Chinese black vinegar, 80g tomato sauce, 1 tsp cornfl our and 100ml water. Heat a wok over medium-high heat. Once hot, add 90ml canola oil. Add tofu and pan-fry on both sides until golden and crisp, then remove from wok. The tofu dice might stick together because of the starch – just separate them carefully with a spatula or chopsticks when pan-frying.
