I’m back from a dreamy honeymoon in South America, the highlight being a cruise down the Amazon, where we saw dozens of endangered pink river dolphins, sloths, toucans, many monkeys and even a baby anaconda, as well as fishing for piranhas (I caught two!) and taking part in a cleansing ceremony with a tribal shaman. We backed this up with a very sweaty four-day hike through the jungles of Colombia to the lost city of Teyuna (see pic below) and then a week exploring some of the country’s major cities and coffee plantations – yum! When Shaz Dagg kayaks solo over Canterbury’s Waimakariri River next year for a notoriously challenging multisport race, her technique will be a little different to other competitors. After all, the Feilding sportswoman only has one arm. But as an amputee who also lives with just one kidney, Shaz is used to facing challenges head on. As Aotearoa’s first elite para-triathlete, who had her left arm amputated below the elbow in 2018 following a freak farm accident, Shaz is busy training for the 2024 Coast to Coast. MANDARIN & SOY BEEF SERVES 4 PREP 10 MINS COOK 5 HOURS • 1.5kg piece topside beef• 4 mandarins, juiced• ⅓ cup soy sauce• ⅓ cup hoisin• 2 tbsp brown sugar• 3 tsp cornflour• ½ tsp white pepper• 3 star anise• 2 cinnamon sticks• 400g fresh thin egg noodles• 2 bunches broccolini, trimmed 1 Put beef in the bowl of a 4.5-litre slow cooker. Combine mandarin juice, soy, hoisin, brown sugar, cornflour, pepper, star anise and cinnamon sticks in a large jug. Pour over beef. Set appliance to Low. Cover and cook 5 hours. Remove beef from slow cooker and transfer to a chopping board. Cover to keep warm. Stand 10 mins. MOROCCAN LAMB PIZZA SERVES 4 PREP 10 MINS COOK 20 MINS • 2 x 300g pizza bases with tomato paste• 500g lamb mince• 1 tbsp Moroccan spice mix• ½ cup Greek-style yoghurt• fresh mint leaves, to serve (optional) 1 Preheat oven to 200°C. 2 Place pizza bases on two oiled oven trays. 3 Cook mince in a heated, oiled large frying pan over medium-high heat, stirring, until browned.
