YEMENI BANANA PORRIDGE This winning combo is a delicious way to use up ripe bananas and stale bread SERVES 4 Mash 4 ripe bananas to a smooth mash. Using a food processor, grind 4 wholemeal pita, naan or stale bread slices into fine breadcrumbs. Combine banana and breadcrumbs in a small saucepan with 2 tbsp butter, 2 tbsp honey and 100ml cream. Place over medium heat and gently warm, stirring regularly, for 5 minutes or until the mixture thickens to a thick, warm pudding. Slice 2 ripe bananas into 1cm rounds.
