NO-COOK CHICKEN & BEAN SALAD
SERVES 4 PREP 15 MINS
• 400g red papaya, peeled, julienned
• 300g green beans, thinly sliced lengthwise
• 2 cups shredded cooked chicken
• 200g punnet baby roma tomatoes, halved
• 60g mixed salad leaves
• 1 carrot, peeled, julienned
• 1 bunch coriander, leaves picked
• ½ small red onion, thinly sliced
• 1 long red chilli, thinly sliced
DRESSING
• ¼ cup lime juice
• 1½ tbsp brown sugar
• 1 tbsp fish sauce
• 2 tsp tamarind puree
1 In a large bowl, combine papaya, beans, chicken, tomato, salad leaves, carrot, coriander, red onion and chilli.
2 DRESSING In a small jug, whisk all ingredients. Set aside until required.
