Everyday food Pan confit tomate Perfect for summer spreads with friends! SERVES 4-6 Preheat oven to 180°C. Pop 250g uncooked chorizo sausages out of their skins in chunks into a large heavy-based frying pan with 1 tbsp olive oil. Let it start cooking out its own flaming red fat over low heat for 1 min or so. Add 1 sliced red onion and gently sweat for 6-8 mins or until softened. Splash in 400ml dry apple cider, then sprinkle a pinch of sugar and toss in 500g cherry tomatoes. Bring to the boil, then turn heat back down to a simmer.
