BAKED TOMATO & CHEESE RISSOLES
SERVES 4 PREP 15 MINS + 20 MINS CHILLING COOK 35 MINS
• 500g beef mince
• 4 rindless bacon rashers,finely chopped
• 1 zucchini, grated (excessmoisture squeezed)
• 1 small onion, grated
• 1 egg, whisked
• 1 tbsp Worcestershire sauce
• 1 tbsp chopped parsley leaves
• 2 tbsp olive oil
• 4 medium potatoes, cut intosmall chunks, parboiled
• 400g butternut pumpkin,peeled, cut into large chunks
• 1 tomato, sliced
• ½ cup grated mozzarella
• basil leaves, to serve
1 Preheat oven to 200°C.
2 In a bowl, combine mince, bacon, zucchini, onion, egg, sauce and parsley. Season to taste. Form into 8 even-sized, flattened patties. Chill for 20 mins.
