PEA PESTO PASTA
SERVES 4 PREP 10 MINS COOK 15 MINS
• 400g orecchiette
• 1 cup frozen peas, thawed
• 1/3 cup finely grated parmesan, plus shaved to serve
• ¼ cup roasted pecans
• ¼ cup olive oil
• ¼ cup basil leaves, plus extra to serve
• 1 tbsp lemon juice
• 1 clove garlic
• 1 tbsp olive oil
• 2 chicken breasts, thinly sliced
• ½ cup semi-dried tomatoes
1 Cook pasta following packet instructions. Drain, reserving ¼ cup cooking water.
2 In a small food processor pulse peas, parmesan, pecans, olive oil, basil, lemon juice and garlic until smooth. Season.
