MEATLOAF PIE WITH SOUR CREAM PASTRY SERVES 6 PREP 30 MINS + CHILLING COOK 40 MINS • 500g beef mince • 75g rindless bacon, finely chopped •1/2 cup panko crumbs • 2 tbsp tomato chutney, plus extra to serve •1/4 cup finely chopped fresh parsley leaves • 2 tbsp finely chopped fresh sage • 2 eggs • Mashed potato, steamed beans, to serve SOUR CREAM PASTRY • 2 1/2 cups plain flour • 150g unsalted butter, chopped • 200g carton sour cream 1 For the pastry, in a food processor, pulse flour, butter and a pinch of salt until coarse crumbs form. MOROCCAN CHICKEN WITH MINTED COUSCOUS SERVES 4 PREP 15 MINS COOK 15 MINS • 450g chicken breast steaks, halved (or turkey if you’re fancy) • Cooking oil spray • 1 tbsp Moroccan seasoning • 1½ cups couscous • 1½ cups boiling water • 250g mixed cherry tomatoes, halved • ¹/ ³ cup finely chopped mint, plus extra leaves, to serve • ½ cup bought tzatziki, to serve 1 Preheat oven to 200ºC. Line an oven tray with baking paper. Place chicken on prepared tray. Spray with oil. Sprinkle with seasoning. Bake 15 mins or until cooked. Cover with foil. Rest 5 mins. Slice. 2 Meanwhile, place couscous and water in a heat-proof bowl. Cover with plastic food wrap, stand 5 mins or until water is absorbed. Fluff with a fork…

SERVES 4 Place 1¼ cups dried red split lentils (rinsed, drained), 1 finely chopped red onion, 1 tbsp finely grated ginger, 3 crushed garlic cloves, 3 tsp mild curry powder, 1 fresh long green chilli and 3 cups vegetable stock in a large saucepan. Bring to the boil over high heat. Reduce heat to medium. Simmer, covered, for 12-15 mins or until lentils are tender, adding 200g green beans (cut diagonally into thirds) for the last 2 mins of cooking time. Meanwhile, bring a small saucepan of water to the boil. Add 6 eggs. Simmer for 6 mins for soft-boiled eggs. Drain and stand in cold water. Peel and halve. Remove and discard chilli. Stir in 2 tbsp lime juice, ¹/ ³ cup light coconut cream, 80g kale and baby…

When Maggie first crossed the rainbow bridge, another dog who was owned by Margaret greeted her. In life, Maggie had anxiety at times and she was sometimes very timid.
