SPICED LAMB & PUMPKIN SOUP

• 2 tbsp olive oil • 750g diced lamb leg, shoulder or forequarter • 1 onion, finely sliced • 1 red capsicum, seeded, finely chopped • 1 tbsp ras el hanout spice mix • 1 garlic clove, finely chopped • 4 cups chicken stock • 400g can diced tomatoes • 750g butternut pumpkin, peeled, seeded, chopped • 400g can chickpeas, rinsed, drained • flatbread, natural yoghurt, fresh coriander, to serve 1 In a saucepan, heat half the oil on high.
