PRAWN & BROCCOLI GREEN CURRY WITH TOASTED COCONUT
SERVES 4 PREP 10 MINS COOK 15 MINS
• 1 tbsp vegetable oil • 1 onion, thinly sliced • 2 tbsp green curry paste • 400ml can coconut milk • ½ cup water • 1 head broccoli, florets, stalk thinly sliced • 1 carrot, halved, sliced • 500g green prawns, peeled, tails on • ½ cup frozen peas • 2 tbsp shredded coconut, toasted (see Tip) • steamed rice, sliced red chilli, to serve 1 In a large frying pan, heat oil on high. Saute onion 3-4 mins until tender. Stir curry paste through. Cook 1-2 mins until fragrant.
