FAMILY CHICKEN CURRY
SERVES 4 PREP 20 MINS + MARINATING COOK 55 MINS
• 1 onion, chopped • ¼ cup yellow curry paste • ¼ cup vinegar (or lemon juice) • 3 garlic cloves, crushed • 1 bunch coriander, root chopped, leaves reserved • 3cm piece ginger, peeled, grated • 2 cardamom pods, crushed • 1.6kg whole chicken, cut into 8 pieces (or 6 wings, 6 drumsticks) • 1 cup water • ¾ cup coconut milk • 1 tomato, chopped • ¼ cup frozen peas • brown sugar, lemon juice, to taste • steamed rice, to serve 1 In a saucepan, combine onion, paste, vinegar, garlic, coriander root, ginger, cinnamon, cardamom and salt.
