SPICED LAMB CHOPS WITH BEAN MASH SERVES 4 PREP 15 MINS + RESTING COOK 10 MINS • 4 lamb forequarter chops, trimmed • 2 tbsp olive oil • 1 tsp ground cumin • 1 tsp ground coriander • 1 capsicum, seeded, chopped • 1 tomato, chopped • 50g feta, chopped • ½ cup mint leaves, roughly chopped • 1 tbsp lemon juice BEAN MASH • 400g can cannellini beans, rinsed, drained • 2 tbsp lemon juice • 1 clove garlic, crushed 1 Coat chops well in half the oil and combined spices.
