GIANT FRECKLE COOKIES MAKES 20 PREP 25 MINS + CHILLING COOK 35 MINS • 250g butter, softened • 1 cup caster sugar • 395g sweetened condensed milk • 2 eggs • 1 tsp vanilla extract • 3½ cups self-raising flour • 4 x 50g boxes Smarties 1 Preheat oven to 180°C. PEA, ASPARAGUS & PECORINO BRUSCHETTA SERVES 4 PREP 15 MINS COOK 15 MINS • 8 x 1.5cm-thick slices sourdough bread • 1 cup frozen peas, thawed • 1 bunch asparagus, trimmed, halved • 250g cream cheese, softened • 1 tsp lemon zest, plus 2 tsp juice • 1 tbsp olive oil • 1 cup mint leaves • 1/3 cup grated pecorino 1 Preheat a barbecue or chargrill pan on medium. Spray both sides of bread with olive oil. Grill bread 1-2 mins each side until grill marks appear. 2 In a saucepan of boiling, salted water, blanch peas and asparagus 30 secs. Refresh in iced water, then drain well. 3 In a food processor, process half the peas with cream cheese, zest and juice, to a chunky paste. Season. 4…

Strawberries & cream cake A refreshing baked treat filled with guilt-free goodies MAKES 1 Preheat oven to 180°C. Lightly spray a 20cm round cake tin with oil and line base with baking paper. Combine 6 individual fresh dates (pitted and chopped) and 1 tbsp boiling water in a medium microwave-safe bowl. Cover and microwave on High for 1 min. Mash dates with a fork. Process 3 medium coarsely chopped bananas, 3 eggs, 2 tsp vanilla essence, 2 tsp baking powder, 125g low-fat cottage cheese and date mixture in a food processor until smooth.
